White Almond Wedding Cupcake with Raffaello, butter-cream frosting and coconut topping.
These cupcakes were a mix between the recipe for White Almond Wedding Cake and the idea for a Raffaello baked into the cupcake came from this website, I suggest you check it out (and follow!) if you’re one of those people who love to put things…inside of other things. Here’s the recipe: (I also add this is hybrid cake mix as it includes a pre-made cake mix but trust me, it doesn’t taste like one)
White Almond Wedding Cake
1 (18.25 ounce) package white cake mix
1 cup all-purpose flour
1 cup white sugar
3/4 teaspoon salt
1 1/3 cups water
1 cup sour cream (for sturdiness)
2 tablespoons vegetable oil
1 teaspoon almond extract
1 teaspoon vanilla extract (I halved the almond and doubled the vanilla but you don’t have to do this)
4 egg whites (for that white cake look)
For the Buttercream
3 sticks unsalted butter at room temperature
2 1/2 cups powdered sugar
2 teaspoons vanilla extract
1 cup shredded coconut (for topping)
